 Healthy Recipes With Antioxidants

  1. Flourless Lemon/Lime Biscuits with Blueberry Whipped Cream

Dense and chewy, these lovely lemon/lime flavoured biscuits are full of antioxidants and other nutrients

Ingredients

  • Large cup of Cashew Butter
  • The Zest and Juice of 1 Lime
  • The Juice of a small Lemon
  • ½ a tsp of Lemon Extract
  • A large pinch of Sea Salt
  • Pack of freeze dried Blueberries or other berries of choice
  • 15oz of chilled Coconut Cream
  • 2 tbsp of Honey or Maple Syrup
  • 1 tsp of pure Vanilla Essence
  • Some fresh Blueberries for a garnish

Method

  1. Place all the ingredients in your food processor and blend together
  2. Spread out on a baking sheet lined with oiled parchment
  • Bake at 350F for about 12 minutes or set
  1. Allow to cool, then slice into desired shapes, frost and remove from the sheet

Make the Cream

  1. Refrigerate the cream until solid, then scoop out and place in a mixing bowl
  2. Grind the freeze dried blueberries to a powder
  • Add to the chilled cream, the berries, honey and vanilla and beat until it forms peaks
  1. Spread on the cooled biscuits and garnish with fresh berries

 

  1. Black Rice with Coconut, Fresh Ginger and Lime

This super simple but tasty dish is can be cooked on the stove top or in the slow cooker

Ingredients

  • 1 cup of Black Rice
  • 1 tbsp of grated fresh Ginger
  • 1 tsp of Sea Salt
  • 3 cups of fresh Water
  • 1 large Lime
  • 1 tbsp of coconut oil

Method

  1. If cooking in your slow cooker just place everything except the lime juice in your cooker and cook for 6 to 7 hours. Then stir in the lime juice
  2. Sauté the ginger until fragrant
  • Stir in the salt and rice, stirring well to coat
  1. Add the water and cover, simmering for 30 minutes
  2. Remove from heat and allow the rice to absorb any remaining water
  3. Let rest for 5 minutes and fluff up and drizzle with the lime juice

 

  1. Sweet Potato Pie

This pie can be made with purple or orange sweet potatoes, with the lovely almond and date crust this pie will appeal to everyone so expect lots of compliments

Ingredients

The Crust

  • 1 cup of Almonds you can remove the skin if preferred
  • 2/3 of a cup of dried Dates
  • Some fresh, cool water if needed to help bind it together

For the filling

  • 2 cups of steamed and mashed Sweet Potatoes, purple or orange
  • About ½ a cup of Raw Honey or Maple Syrup
  • 1/3 of a cup of Coconut Oil
  • 2 tbsp of Nut or Dairy Milk
  • 2 tbsp of Pomegranate Juice
  • 1 tsp of Vanilla Essence
  • ¼ of a tsp of Ginger powder
  • 1/8 of a tsp of Nutmeg
  • ½ a tsp of Sea Salt

Method

For the Crust

  1. Pulse the dates and nuts together in your food processor, adding a small amount of cool water if needed
  2. Press this into an 8 inch pie tin

For the Filling

  1. Blend everything together, then take and adjust the flavor
  2. Spread on the pie crust and refrigerate for at least 3 hours
  3. Slice and serve cold with cream and sliced nuts
